The purple coloured vegetable "Brinjal" also named as eggplant is often taken for granted by most of the people. Surprisingly, this vegetable is biologically a fruit however due to its taste and texture it is always kept in the vegetable section in the kitchen. Yet another surprising fact about it is it's amazing nutrient content. Ranging in various size and color it has a high antioxidants value and nutrient density
They are high in fiber and hence helps to control blood sugar and ease up the digestive tract. Some research have given evidence that it may have a protective effect on the heart. It has pigment anthocyanin which gives it the bright purple colour. Anthrocyanin pigment also has good antioxidant properties that protects the body against cellular damage.
